In the novel Black Cake, Charmaine Wilkerson uses a cake to symbolize the history of a family. Yet, the recipe for this cake also contains a larger history—a story of global commodities trade, of European cravings for sweetness, and of colonialism, slavery, and survival. This lecture will explore the history of sugar production to highlight the larger context of the novel Black Cake.
